Hope all is well down there...... sounds like you have finished your house???

The slow cooked roast beef is great.... you can also do it with prime rib, it is fantastic.  Another option is to by a hole beef tenderloin from Costco, trim off the "skin" layer and then bbq as a regular roast. Should take about an hour or two depending on the size.

Remember my 50th birth day party on Cortes, we had slow cooked prime rib, it was in there about 3 hrs to long but it was pretty good.  When is labour day in the US? here it is the 7th of September...
